- Oriental Cilantro Slaw

- 1 medium cabbage, shredded
- 1 large carrot, grated
- 1 cup packed minced cilantro
- 1/4 cup thinkly sliced scallions

- Dressing:
-
- (3 T peanut oil + 3 T canola oil) or (6 T canola oil + 1 T peanut butter)
- 4 T fresh lime juice
- 3 T soy sauce
- 1 or 2 jalapeno peppers, seeded and chopped
- salt to tast if necessary

- Top with 1/2 cup coarsely chopped peanuts just before serving
